Ingredients (Serves 2–4)
For the Strawberry Sauce
100g fresh strawberries, hulled
1 tbsp icing sugar (adjust to taste)
1 tsp lemon juice
For the Eton Mess
250ml double cream
2 tbsp icing sugar
1 tsp vanilla extract
4 store-bought meringue nests, roughly crushed
250g fresh strawberries, hulled and chopped
Dark chocolate shavings or heart sprinkles (optional, for decoration)
Method
1. Make the Strawberry Sauce
Place 100g strawberries, icing sugar, and lemon juice in a food processor.
Blend until smooth. Add a teaspoon or two of water if needed for a thinner consistency.
Taste and adjust sweetness. If you prefer a smoother finish, strain the sauce through a fine sieve.
2. Whip the Cream
In a mixing bowl, whisk the double cream, icing sugar, and vanilla until soft peaks form.
Take care not to overwhip—the cream should hold its shape but still feel light.
3. Assemble the Eton Mess
Fold the crushed meringue and half the chopped strawberries gently into the whipped cream.
Drizzle in half of the strawberry sauce and lightly swirl for a marbled effect.
4. Serve and Garnish
Spoon into serving glasses or small bowls.
Top with remaining strawberries and drizzle over the rest of the sauce.
Add chocolate shavings or festive sprinkles if using.

Chill your cream: Cold cream whips faster and more reliably. Keep your mixing bowl in the fridge for 10 minutes before starting if it’s a warm day.
Shortcut approved: Store-bought meringue works perfectly here, but feel free to make your own if you’re feeling ambitious.
Use what you have: Raspberries or a berry mix can easily stand in for strawberries. The sauce is forgiving.
