Spooky Eyeball Jelly Cups

There’s something about Halloween that brings out everyone’s playful side and these Spooky Eyeball Jelly Cups are just the treat to make your table come alive! They’re equal parts gory and giggly, layered with vibrant jelly and floating “eyeballs” that stare right back at you.

This is the perfect make-ahead dessert for kids’ parties, spooky movie nights, or a fun twist at your Halloween get-together. They’re simple to make, visually striking, and always get a great reaction especially when those eyeballs start to bob in the jelly.

Ingredients

2 packets jelly crystals (choose two spooky colours — red and green are perfect)
1 can lychees, drained and patted dry
1 punnet blueberries
6 small tumblers

Method

  1. Mix the first jelly
    Prepare your first packet of jelly following the packet instructions. Choose a bold, deep colour like red for maximum effect.

  2. Fill the cups
    Divide the jelly between your cups, filling each about halfway. Carefully place them in the fridge and chill for around 2 hours, or until the jelly is just set.

  3. Make the eyeballs
    While the first layer sets, it’s time to make your spooky centrepiece, the edible eyeballs.
    Take a lychee and gently press a blueberry into the hole where the pip was removed. The blueberry forms the “pupil” and gives a realistic effect once set in jelly.

  4. Add the eyeballs
    Once your first jelly layer has firmed up, drop in one or two eyeballs per cup. They should sit nicely on the surface without sinking.

  5. Mix and pour the second jelly
    Prepare the second jelly flavour (green works beautifully against the red). Allow it to cool for 5–10 minutes before pouring gently over the eyeballs until the cups are nearly full. This helps prevent the heat from melting the first layer.

  6. Set again
    Return the cups to the fridge and chill for at least 4 hours, or until completely set. Once firm, they’ll be ready to serve straight from the fridge — no extra decoration needed.

Chef’s Tips

  • For a glow-in-the-dark twist, serve them under UV light — the bright colours look incredible.

  • If you’re preparing these in advance, cover the cups with cling film to keep the jelly fresh and glossy.
