Makes 9–12 slices
Ingredients
Base
3 cups puffed quinoa
3 scoops protein powder (vanilla or chocolate)
Pinch of salt
Binders
80 g nut butter or sunflower seed butter (nut-free option)
60 g maple syrup or honey
150 g dark chocolate
Decoration
50–80 g white chocolate, melted
Optional: pinch of flaky salt or cinnamon
Method
Mix the dry
In a large bowl, combine the puffed quinoa, protein powder, and salt.Melt the binders
In a small saucepan over low heat, add the nut or seed butter, maple syrup, and dark chocolate. Stir gently until smooth, glossy, and fully melted.Combine
Pour the warm chocolate mixture over the dry ingredients. Mix until everything is evenly coated and slightly sticky.Press firmly
Line a tin with baking paper. Transfer the mixture in and press down firmly using the back of a spoon or the base of a glass.

Drizzle or zigzag the melted white chocolate over the top. Add a light pinch of flaky salt or spice if using.Chill and slice
Refrigerate for at least 1 hour until fully set, then slice into bars or squares.
