Spicy Rica-Rica Scones

A Bold Twist on the Classic Scone — but not as you know it. These Spicy Rica-Rica Cheese scones bring the heat and the depth. Laced with a fiery Rica-Rica sauce and finished with some cheese and a generous spoon of that same addictive relish. Designed to be light and springy, they rest twice before baking to get that signature bounce. Serve warm, serve proud.

Ingredients

Dry Mix

  • 375g self-raising flour

  • 1 tsp baking powder

  • ½ tsp fine salt

  • ¼ tsp cracked black pepper

  • ½ tsp smoked paprika

  • 120g cold unsalted butter, cubed

Wet Mix

  • 175ml buttermilk

  • 1 large egg

  • 2 tbsp Sambal Sambal Rica-Rica sauce (drained slightly if oily)

To Finish

  • Grated cheese to top (Optional - cheddar, Red Leicester or your spicy blend of choice)

  • Slices of cheese for serving (optional)

  • More Rica-Rica sauce for topping

Method

1. Mix the Dough
In a large mixing bowl, combine flour, baking powder, salt, pepper and smoked paprika. Rub in the butter with your fingertips until the mixture resembles breadcrumbs.

In a jug, whisk the buttermilk, egg and Rica-Rica sauce together. Add to the dry ingredients and gently mix until just combined. Don’t overwork it — we want soft, tender scones.

2. Rest #1
Wrap the dough and refrigerate for 30 minutes. This first rest helps the flour absorb the liquid and keeps the butter cold.

3. Shape and Cut
Roll out on a floured surface to 3cm thickness. Cut into circles or wedges — your call. Place them on a lined baking tray.

4. Rest #2
Pop the tray back into the fridge for another 30 minutes. This double chill ensures rise and bounce in the oven.

5. Bake
Preheat your oven to 200°C fan / 220°C conventional. Sprinkle each scone with a little extra cheese and bake for 10/12 minutes, until puffed and golden.

6. Serve
Enjoy warm with:

  • A thin slice of cheese melted over the top

  • A final spoonful of Rica-Rica sauce

Tips

  • Swirl effect? Fold the Rica-Rica through at the very end of mixing for a marbled look.

  • Freeze-friendly: Shape and freeze raw. Bake from frozen, adding a few extra minutes.

  • Serving idea: Slice them open and fill with cheese + chilli jam for the ultimate spicy sandwich snack.
