Christmas Fruit Wreath with Cinnamon Pastry Swirls

Ingredients
Cinnamon Pastry Swirls
2 sheets ready-made puff pastry
1/3 cup brown sugar
1/3 cup white sugar
2 tbsp cinnamon
Melted butter (for brushing)
Fruit Wreath
Watermelon, cut into stars
Rockmelon (cantaloupe), cut into stars
1–2 mango cheeks, scored into cubes
2–3 kiwis, peeled and sliced
Strawberries, fanned
Blueberries or raspberries (optional)
Fresh mint leaves for decorating
To Serve
Small bowls of Greek yoghurt
A sprinkle of granola
Method
Make the Cinnamon Pastry Swirls
Mix the Cinnamon Sugar
Combine brown sugar, white sugar, and cinnamon in a bowl.

Lay out the first sheet of puff pastry and lightly brush with melted butter.
Sprinkle generously with your cinnamon sugar mixture.
Place the second pastry sheet directly on top.Roll & Slice
Roll the pastry up tightly into a log.
Slice into approximately 12 even wheels.Bake
Place on a lined tray and bake at 200°C for 15 minutes, or until golden brown and puffed.
Cool slightly. Dust with icing sugar if you like.
Assemble the Fruit Wreath
Arrange the Base Circle
On a large round platter, create a wide wreath shape using the watermelon and rockmelon stars.
Scatter them generously for colour and shape.Add the Fruit Layers
Place the cubed mango cheeks around the wreath.
Add kiwi slices for a fresh green pop.
Fan out strawberries and tuck them in for texture and height.
Add berries if using.
Place the Cinnamon Swirls
Sit the pastry wheels around and within the wreath — and don’t be shy.
